RECIPE IDEAS

In the spirit of International Education Week, here is a curry dish to warm your tummy.

Chicken/Veggie Korma with Basmati Rice

Ingredients

1 chopped onion

2 tablespoons of oil

2 cups of chopped cauliflower or broccoli

1 package of extra firm tofu or 2 cups of chicken chopped and fried

1 cup of chopped carrots

1 jar of korma curry sauce

1 cup of peas

4 cups of cooked basmati rice

Method

Cook the basmati rice according to the package using a pot or rice cooker so you end up with about 4 cups of cooked rice.

Fry the onion, cauliflower, broccoli, carrots and tofu or chicken in a large pot with oil until they begin to soften, and the protein is cooked. Add the curry sauce and peas and simmer for about 5 minutes.  Serve the curry over rice and take the leftovers for lunch the next day.
