RECIPE IDEAS
Pumpkin Soup
If there is one item that is inexpensive and plentiful right now it’s pumpkins! This thick and hearty soup is vegan and gluten free and pairs well with garlic bread or a salad for an midday meal.
Ingredients:
1 medium peeled & cubed pumpkin or 1 large can of pumpkin puree
|
1 cup of water
|
2 tbsp of butter or oil
|
3 cups of veggie broth
|
2 minced cloves or 2 tsp of powdered garlic
|
1 can of coconut milk
|
1 chopped white onion
|
1 tbsp of curry powder or paste
|
Optional: chopped bell pepper, carrot, or celery
|
1 teaspoon of salt
|
Method:
Place the pumpkin, water and veggie broth in a large pot and simmer until the pumpkin is soft. In another medium pot, fry the garlic and onion and optional vegetables with butter until soft. Add the fried vegetables to the large pot, add the coconut milk, curry powder, and salt, and simmer for 10 minutes. Use a hand blender to puree if you like or enjoy a chunky-style soup.
