MEAL IDEAS

Pan Fried Zucchini Patties

This is a great way to make use of zucchini that’s available for a low cost at many local farm stands.  It’s vegetarian, gluten free and can be made vegan.  Try these for a dinner side dish and bring left-overs for lunch.

Ingredients:

2 cups shredded zucchini
2 eggs (omit for vegan)
½ cup sliced onion
½ cup grated cheese of choice (omit for vegan)
2/3 cup breadcrumbs (gluten free crumbs available)
2 tablespoons rice flour
Salt & pepper to taste
¼ cup of vegetable oil for frying

Method:

Combine all ingredients in a large bowl and add more flour if needed.  Use your hands or two spoons to form golf ball sized balls.  Heat vegetable oil and press balls in to pan to make patties.  Cook until light brown on both sides and serve hot or cold.
